This has been a dream of mine for about a year and a half, and FINALLY my brother was able to help me construct a safety rail so that I wouldn't kill myself during this project.
We ended up using an old DDR pad that I rewired to be USB, had that plugged into my laptop running Stepmania, and ran the audio from my laptop through the truck's speakers so that we could hear it while I played. My brother said that we were going between 25 and 30 mph... if we went any faster than 30 then the wind would push my laptop closed, so it was just kinda fail like that.

I showed this to my friend and he said that he's played Supernova on the back of a flatbed during a parade... but didn't have any pix/video of it :/ @Act Deft I got a few weird looks, but I live in a small town now... so there wasn't really that many people out in the area we were in.
